#1. Pumpkin Coconut Curry Soup
I always seem to end up with an extra can of pumpkin.This recipe is a quick and easy way to whip up a 10-minute dinner. I love to serve this with warm pita bread on the side, or I’ll serve this soup with Sriracha Grilled Cheese.
Ingredients
1 Can of Pumpkin
1 Can of Coconut Milk
1 Can of Broth (Veggie or Chicken)
1 Spoonful of Thai Red Curry Paste
Chopped Cilantro (for garnish)
Directions
Combine all ingredients (except the cilantro) in a pot. Stir together.
Heat the soup over medium heat.
Garnish with Cilantro
